How about this:

dir c:\*.txt /s > c:\dir.txt

or this:

@echo off
echo.
set /p ext=Please enter a file extension (e.g. .txt):
if "%ext%"=="" goto :eof
echo The following %ext% files were found on %date% at %time% > c:\dir.txt
echo ========================================= >> c:\dir.txt
dir /b /od c:\*%ext% /s >> c:\dir.txt
notepad c:\dir.txt
